Today is the day for Korean spicy chicken! All right, if you have been following me for a time, you have probably already observed that I have a strong preference for chicken and spicy food. On the other hand, I would like to bring to your attention that my food is not as spicy as the food that is served by other Korean restaurants. As a result of my many years spent living abroad, I am no longer able to consume food that is excessively hot.

Regarding my chicken anecdote, I would like to mention that one of my favourite Korean dishes is the Korean spicy chicken stir fry, also known as Dak Galbi (勭谈비). When all is said and done, I was the daughter of a Dak Galbi restaurant owner for more than ten years! The fact that you are reading this is a clear indication that you ought to give this recipe a try!

To tell you the truth, my sister asked me to prepare some Dak Galbi for dinner the other day, and we ended up having such a wonderful meal together. In spite of this, I did not end up using all of the chicken that had been marinated because I was unable to fit it all into a pan along with everything else. Oh, boy! It was a delicious pizza! I am referring to the very best. It was something that I could have eaten over and over again without end! The fact that it was so wonderful was also praised by both my husband and my sister. No doubt, it will take your pizza to the next level!

INGREDIENTS FOR KOREAN BBQ CHICKEN PIZZA (MAKE 4 SMALL PIZZAS)

Main

  • 4 tortillas (20cm/8 inch)
  • 120g (4.2 ounces) chicken thigh fillet, cut into thin strips
  • 150g (5.3 ounces) sliced pineapple pieces (from a tin), syrup or juice drained
  • 1/2 medium sized purple onion (85g, 3 ounces) – thinly sliced
  • 2 cups pizza cheese (or mozzarella cheese)
  • BBQ sauce
  • Extra virgin olive oil
  • (Optional) baby spinach leaves or coriander leaves to garnish

Marinades (mix these in a bowl)

  • 2 tsp Korean chilli paste (Gochujang)
  • 1/2 tsp Korean chilli flakes (Gochugaru)
  • 1/2 tsp soy sauce
  • 1 tsp rice wine
  • 1/2 tsp minced garlic
  • 1/4 tsp minced ginger
  • 1/2 tsp raw sugar
  • A few sprinkles ground black pepper

1. Marinate the chicken in the marinades for 30 mins in the fridge. (You can definitely marinate it longer for an extra flavour. I typically marinate BBQ meat for at least 4 hours in the fridge, however, for this recipe, I only marinated it for 30 mins. It still tasted great!) If you have any leftover chicken meat from this recipe, you can definitely use it, as the marinade for this chicken pizza recipe originates from there.

2. Cook the chicken in a heated skillet until done (about 3 to 4 mins).

3. Put the pizza stone into the oven and preheat it at 210C/410F (fan forced setting) for 15 mins. While waiting, brush a thin layer of olive oil onto the tortilla base and follow by another thin layer of BBQ sauce.

4. Scatter the cheese around on the tortilla base and add some purple onions and pineapple pieces. Add the chicken strips and your choice of green leaves on top. (Make sure you evenly share the toppings among the 4 tortilla pizzas.)

5. Place the pizza on top of the pizza stone and cook (no changes in the oven setting) until the cheese is melted and the tortilla base has a crispy texture. (Takes about 7 mins). While you don’t have to use a pizza stone, I highly recommend it. It makes really nice crispy textured pizza! (Pizza cooked on the top rack crisp faster, so you might want to take it out first.)

6. Take the pizza out and slice. (Check out my favourite pizza cutter!) Serve hot.
