Cinnamon Rolls Without Gluten

Ingredients: For the dough: – 2 cups gluten-free all-purpose flour – 1 cup almond flour – 1/4 cup tapioca flour or arrowroot powder – 1/4 cup granulated sugar

– 1 packet (2 1/4 teaspoons) instant yeast – 1/2 teaspoon salt – 1 cup warm milk (about 110°F) – 1/4 cup unsalted butter, melted – 1 large egg

For the filling: – 1/4 cup unsalted butter, softened – 3/4 cup brown sugar, packed – 2 tablespoons ground cinnamon

For the icing: – 1 cup powdered sugar – 2-3 tablespoons milk or water – 1/2 teaspoon vanilla extract

 In a large mixing bowl, whisk together the gluten-free all-purpose flour, almond flour, tapioca flour or arrowroot powder, granulated sugar, instant yeast, and salt until well combined.

In a separate bowl, combine the warm milk, melted butter, and egg. Whisk until the egg is fully incorporated into the mixture.

Pour the wet ingredients into the dry ingredients and mix until a soft dough forms. If the dough is too sticky, you can add a little more gluten-free flour, one tablespoon at a time, until it reaches the desired consistency.
