This is a straightforward salad that has a pleasant flavour, and I enjoy making it all the time during the summer.  

Despite the fact that he is not as enthusiastic about tomatoes as I am, my husband will have a second serving of this dish.  

In the past few years, I have taken the recipe from a newspaper and clipped it out.  

1⁄3cup mayonnaise 2teaspoons red wine vinegar 1teaspoon Dijon mustard

1pint cherry tomatoes, halved (I usually use grape tomatoes) 1⁄4cup finely chopped red onion 2tablespoons chopped fresh parsley – salt and pepper, to taste

– Whisk mayonnaise, vinegar and mustard together.

– Add tomatoes, onions and parsley.

– Toss well and season to taste.
